What You Need
1kg (2.2lb) Gram Flour
750g (1.65lb) Tytte Mjøl / Teff Flour
100g (26.45oz) Fibrex 67% kostfiber / Dietary Fiber
400g (1.65lb) Majsstivelse
Mix it all together! A big bowl helps.
Store in an air tight container or pour the mixes back into the bags you purchased them in.
Use for all kinds of baking or cooking recipes
WARM coconut oil in a saucepan
MIX in almond meal to create a paste
STIR IN dashes of cinnamon, nutmeg
POUR into jar for storage
SERVE as bites drizzled with chocolate, in cereals, on toast, ice cream
GATHER Your Ingredients
Oatflour, or oats to grind into flour
Havrekli or oat kernals
Baking soda & Baking powder
Coconut flakes (unsweetened)
Dates and/or a ripe banana
Accoutrements: Cinnamon, nutmeg, nuts, toasted buckwheat kernels,
MIX all the dry ingredients together
MIX in mashed dates and banana
ADD a healthy scoop of coconut oil and warm water to melt the oil. Just enough to make the mixture moist and sticky.
BAKE at 200C for 12-20minutes
Less time for smaller bites
More time for thicker bites
Goji Yogurt Sauce
Mix yogurt with goji berries and the juice from frozen berries for a zesty yogurt topping. Let sit overnight in the fridge. Ready to serve in the morning.
Molasses and Vanilla Sauce
Mix a tablespoon of blackstrap molasses and a few drops of your favourite vanilla into yogurt for a richer flavoured sauce.
Try them topped with toasted coconut or buckwheat kernels
GRAB Dates, smush em up after taking out the pit
Flax seed, ground or grind-up the seeds in a blender or coffee grinder
Ginger and cinnamon powder to taste (about 1-2tsp each)
Heaping spoonful of cold pressed coconut oil
Get your (clean) hands in there to mix it all together
Press between two sheets of wax paper to desired depth
Slice bite size pieces, separate with wax paper
Add to ice cream, smoothies, oats, and on their own.

The first try at making lefse turned out ok, though some things maybe are better left for purchasing at the market. The best result might have been the smell and experimenting with different ingredients to roll up in the lefse.
I really had no idea what I was doing, but made the dough, rolled it out as thin as I could, then cooked in the pan until golden and warm.
Roll the Lefse With:
Brunost (brown cheese) and cucumbers
Brown deli mustard and salmon, dill sprinkles
Soak spoonfuls of chiaseeds in water for at least one hour
Blend in a cup of rinsed, frozen berries
Store in a sealed jar, spread for about 5 days #chowhapppy!

Kidney beans and spring greens turned out totally delightful along with a mix of tomatoes and other delightfully common assortments
The sauce was made out of tomato paste and fresh herbs like basil, rosemary, thyme, and black pepper
Variation on bread or crackers-to put honey on, dip in soups, have with coffee, or settle an upset stomach. Plain and versatile!
Belly Soothing Baked Goods
Rice flour (about 2C)
Oats (the quick or long cooking kind, as long as the grain is flat, gluten-free to keep the recipe celiac friendly)
Add a dash of sea salt
Make a bowl shape in the bowl
Whisk together three eggs, then mix into the flour with enough water to make the dough wet and spreadable
Tin foil or parchment line a baking tray, spread out olive or coconut oil to grease.
Bake for about 40min at 400C, less for chewy, more for crisp results.

CHOP dried persimmons
STIR into a mixture of gluten-free flours
MIX 1C each, Buckwheat & Oat flours, 1Tbsp baking powder
SHAKE in cinnamon & nutmeg if you like
MIX together with enough warm water to form a paste/doughlike consisency
PLOP onto a parchment lined baking tray, oiled with coconut oil
BAKE at 200C for about 10min or until cooked the way you like
SERVE with Matcha latter, earl grey, or coffee.
Chow happy idea: Add to a bowl of GF oats
Palm-oil free chocolate spread.
Cocos Kakao Spread
Melt coconut oil in saucepan
Add non-alkalized chocolate powder
Unsalted almond butter
MIX together, adding the honey to the desired sweetness. More cocoa and almond butter for spreadable thickness or less for more syrupy consistency.
SPREAD on toast, ice cream, fruit, etc.
STORE in a jar in the fridge for as long as it lasts…which likely won’t be long!
